👩🍳 Makes 12 Muffins
🌾 125g brown rice flour
🌰 ½ cup (50g) ground almonds
🌾 ½ cup (80g) buckwheat flour
🥄 1 Tablespoon baking powder
🍯 3 drops cinnamon essential oil
🍃 2 drops ginger essential oil
🫒 ½ cup (125ml) olive oil
🌴 ¼ cup (60ml) coconut sugar (optional)
🥚 2 large free-range eggs
🧊 2 teaspoons finely grated fresh ginger
🥕 2 medium-sized carrots, grated
🍌 2 large bananas
🍎 1 apple, skin off, cut into cubes
🥜 ½ cup (80g) finely chopped sliced almonds or walnuts to garnish
👩🍳 Instructions:
1. Preheat oven to 180°C. Line a regular muffin pan with 10 paper liners.
2. Sift dry ingredients into a bowl and whisk together thoroughly.
3. In another bowl, combine oil, vanilla, bananas, eggs, essential oils, and grated ginger. Whisk for 2 minutes, then pour into the dry ingredients.
4. Add carrots, apple, and dates. Stir until just combined.
5. Spoon the mixture into the muffin pan, sprinkle tops with sliced almonds (or walnuts), and bake for 25 minutes or until a skewer inserted into the center of a muffin comes out clean.
6. Set aside for 5 minutes before transferring muffins to a wire rack to cool. Best eaten on the day of baking, but they will store for 1-2 days in an airtight container.
